5 Minute Dill Pickles


Cucumber season is in full swing and I’ve finally gotten around to trying this amazing 5 minute dill pickle recipe. It’s pretty delicious and gives you one more reason to enjoy cucumbers this summer. Cucumbers purify the skin and improve digestion. Try this recipe for a refreshing afternoon snack, or as a side at lunch or dinner!


2 large cucumbers

1/2 cup rice vinegar

2 tbsp. coconut sugar

2-3 shallots, thinly sliced

3 tbsp fresh dill, chopped

2 tsp sea salt

Peel the cucumbers and cut in pickle sized pieces. Place cucumbers in a bowl and toss with 1 tsp sea salt. In a small saucepan, combine vinegar, sugar, and 1 tsp sea salt. Bring to a simmer over medium heat and cook until sugar has dissolved. Pat dry any excess moisture from the cucumbers and place them in a mason jar. Cover the cucumbers with the vinegar mixture, along with the shallots & dill. Can either serve right away or chill for 2 hours and then serve. Enjoy!!
