It’s not a novel concept, but something I am particularly excited about as of late… it’s…. soup in a jar!
As a total soup lover, and with fall approaching this year I found myself craving soup! I didn’t find the time to make a whole pot so I was trying to come up with ways to have “instant soup” without buying it… that is, I wanted fresh, homemade, and instant soup!
So, here’s what I came up with… it just so happens that it’s totally delicious and addictive.
Recipe for Courtney’s Soup In A Jar
500 ml mason jar
1 cake of noodles, from a package of Organic Black Rice Ramen Noodles
1/4-1/2 cup of organic peas, fresh or frozen
1/5 of a package 250 g package of Henry’s organic tempeh, cubed
1 large tbsp organic miso
sea salt & herbs to taste (black pepper, cayenne, basil, chilli flakes)
Pack all ingredients into the mason jar. You will need to break up the cake of noodles to get them all in there. Boil about 2 cups of water and fill the mason jar with enough boiling water to fill just below the top of the jar. Screw on the lid and let sit for 1 minute. After a minute, give it a stir to break up the noodles. The jar will be full, so be careful not to spill! Replace the lid, and let sit for another minute. Pour into a large bowl. Stir again to make sure all ingredients are mixed up. Slurp it up and enjoy!!
